Prepare the Batter

Mix Dry Ingredients
In a large bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper until well combined.

Add Beer
Gradually whisk in the cold beer (or sparkling water) until the batter is smooth and free of lumps. Let it sit for about 10 minutes.
Fry the Cheese Curds

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Coat the Curds
Dip each cheese curd into the batter, allowing any excess to drip off.

Fry the Curds
Carefully place the battered curds into the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
