Method
Cooking Instructions
- 1
Cook the Pasta
In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.
- 2
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3
Add Vodka
Pour in the vodka and let it simmer for about 2-3 minutes, allowing the alcohol to cook off.
- 4
Incorporate Tomatoes
Add the canned crushed tomatoes to the skillet and stir well. Let the sauce simmer for 10 minutes.
- 5
Add Cream and Cheese
Lower the heat and stir in the heavy cream and grated Parmesan cheese. Season with salt and black pepper to taste. Let it simmer for an additional 5 minutes.
- 6
Combine Pasta and Sauce
Add the cooked rigatoni to the sauce and toss to coat evenly. If the sauce is too thick, add a splash of pasta water to reach desired consistency.
- 7
Serve
Garnish with chopped fresh basil before serving.
