Prepare the Spice Rub
In a bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper.

Season the Pork
Rub the spice mixture all over the pork shoulder. Ensure it is evenly coated.

Slow Cook the Pork
Place the seasoned pork in a slow cooker. Pour the apple cider vinegar over the pork, cover, and cook on low for 8-10 hours, or until the pork is tender and easily pulls apart.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the apple bourbon BBQ sauce. Let it cook for an additional 30 minutes.

Assemble the Sandwich
Place a generous portion of the pulled pork on the bottom half of each specialty roll. Top with shredded cheddar cheese and cover with the top half of the roll.
