Prepare the Yeast Mixture
In a large mixing bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
Gradually add the all-purpose flour and kosher salt to the yeast mixture, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzel Sticks
Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 12-14 inches) and twist into a pretzel shape or leave as sticks.

Baking Soda Bath
In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel stick for about 30 seconds, then remove and place them on a baking sheet lined with parchment paper.
