    Prepare the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine the quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Roast the Carrots

    Preheat the oven to 400°F (200°C). Peel and cut the carrots into bite-sized pieces. Toss them with olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for about 20-25 minutes or until tender and slightly caramelized, stirring halfway through.

    Prepare the Mustard Lemon Glaze

    In a small bowl, mix together the mustard, lemon juice, honey, salt, and pepper until well combined.

    Cook the Salmon

    Heat a non-stick skillet over medium-high heat. Add a little olive oil if necessary. Season the salmon steaks with salt and pepper. Place the salmon in the skillet and cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork. Brush the mustard lemon glaze over the salmon during the last minute of cooking.

    Serve

    On plates, serve a portion of quinoa, top with roasted carrots, and place the glazed salmon steak on the side. Drizzle any remaining glaze over the salmon and serve immediately.
