1. Prepare the Steak

Take the dry-aged rib-eye steak out of the refrigerator and let it come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

2. Cook the Steak

Heat the olive oil in a cast-iron skillet over high heat. Once hot, add the rib-eye steaks and sear for 4-5 minutes on each side for medium-rare, adjusting time for preferred doneness. Remove from skillet and let rest for 10 minutes.

3. Make the Arugula Salad

In a large bowl, combine arugula, halved cherry tomatoes, and thinly sliced red onion. Drizzle with lemon juice and toss to combine. Season with salt and pepper to taste.

4. Prepare the Mashed Potatoes

In a pot, boil the potatoes until tender. Drain and return to the pot. Mash the potatoes and mix in the butter and milk until creamy. Season with salt and pepper to taste.

5. Serve

Slice the rib-eye steak and plate alongside the arugula salad and a generous serving of mashed potatoes.
