Prepare the Ingredients
Gather all the ingredients. If using King Crab Surimi, prepare it according to the package instructions.

Melt the Cheese
In a non-stick skillet over medium heat, place one corn tortilla in the skillet. Sprinkle a generous amount of Queso Oaxaca on top and cover with another tortilla. Cook until the bottom tortilla is golden and the cheese begins to melt, about 2-3 minutes.

Flip and Cook
Carefully flip the quesadilla using a spatula and cook for another 2-3 minutes until the second side is golden and the cheese is fully melted.

Repeat
Repeat the process for the remaining tortillas and cheese. Keep the cooked quesadillas warm in a low oven if necessary.

Serve
Cut each quesadilla into quarters and serve hot with your choice of salsa on the side. Add King Crab Surimi on top if desired.
