    Prepare the Guajillo Sauce

    Remove the stems and seeds from the guajillo chiles. In a pan, heat vegetable oil over medium heat, add the chiles, and toast for 1-2 minutes. Add garlic, onion, and water. Simmer for 15 minutes. Blend until smooth and season with salt.

    Prepare the Enchiladas

    Preheat the oven to 375°F (190°C). Lightly fry each corn tortilla in oil until soft, then fill each with a generous amount of Monterey Jack cheese. Roll them up and place them seam-side down in a baking dish.

    Assemble and Bake

    Pour the guajillo sauce over the enchiladas and sprinkle with Mexican white cheese. Bake for 20-25 minutes until bubbly and golden.

    Serve

    Serve the enchiladas hot with your choice of refried beans, black beans, or Spanish rice on the side.
