Two enchiladas filled with Monterey Jack cheese topped with chile guajillo sauce and Mexican white cheese. Served with sopa & your choice of refried beans, black beans or Spanish rice.

Prepare the Enchiladas
Preheat the oven to 375°F (190°C). Lightly fry each corn tortilla in oil until soft, then fill each with a generous amount of Monterey Jack cheese. Roll them up and place them seam-side down in a baking dish.

Assemble and Bake
Pour the guajillo sauce over the enchiladas and sprinkle with Mexican white cheese. Bake for 20-25 minutes until bubbly and golden.

Serve the enchiladas hot with your choice of refried beans, black beans, or Spanish rice on the side.
