    Prepare the Potatoes

    Peel the Russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl of cold water to remove excess starch. Let them soak for about 15 minutes.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with paper towels. Make sure they are as dry as possible to achieve crispy hash browns.

    Mix Ingredients

    In a large bowl, combine the grated potatoes, salt, black pepper, and finely chopped onion (if using). Mix well to ensure the seasoning is evenly distributed.

    Cook the Hash Browns

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the potato mixture in an even layer. Cook for about 5-7 minutes until the bottom is golden brown and crispy.

    Flip and Finish Cooking

    Carefully flip the hash browns using a spatula. Cook the other side for another 5-7 minutes until golden brown and crispy. Adjust the heat as necessary to prevent burning.

    Once cooked, remove the hash browns from the skillet and drain on paper towels. Serve hot with fermented ketchup on the side.
