    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a large bowl, combine flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk until just combined. Turn dough out onto a floured surface and knead gently. Roll out to 1-inch thickness and cut out biscuits. Place on a baking sheet.

    Bake the Biscuits

    Bake the biscuits in the preheated oven for 12-15 minutes, or until golden brown. Remove from oven and set aside.

    Cook the Sausage Gravy

    In a large skillet over medium heat, crumble and cook the maple pork sausage until browned and cooked through. Stir in flour and cook for 1-2 minutes until lightly browned. Gradually whisk in milk, cooking until thickened. Season with salt and pepper.

    Fry the Eggs

    In a separate skillet, fry the eggs sunny side up to your liking.

    Assemble the Dish

    To serve, split the biscuits in half and ladle the sausage gravy over the top. Add a fried egg on each biscuit and sprinkle with chopped chives.
