    Prepare the Glaze

    In a small saucepan over medium heat, combine the apricot preserves and balsamic vinegar. Stir until the preserves are melted and the mixture is well blended. Remove from heat and set aside.

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Drizzle with olive oil, then season with salt, black pepper, and your choice of lemon pepper seasoning or Cajun seasoning on both sides.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.

    Grill the Salmon

    Place the seasoned salmon fillets on the grill skin-side down. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Glaze the Salmon

    During the last minute of grilling, brush the apricot glaze over the top of the salmon fillets.

    Serve

    Remove the salmon from the grill and let it rest for a couple of minutes. Serve with extra apricot glaze on the side if desired.
