Prepare the Brisket
Smoke the brisket until it reaches a tender consistency, ideally at a temperature of 225°F for about 10-12 hours or until it reaches an internal temperature of 195°F.
Assemble the Boxed Lunch
Slice the smoked brisket into portions of 1/3 lb and place it on the Michigan bun. Add a generous scoop of coleslaw on the side. Pack the housemade chips, corncake, and housemade pickles in the lunch box.
Serve with BBQ Sauce
