Yuca

Method

Preparing the Yuca

    Peel and Cut Yuca

    Peel the yuca (cassava) using a vegetable peeler. Cut it into 2-3 inch pieces.

    Boil Yuca

    In a large pot, add 4 cups of water and 1 teaspoon of salt. Bring to a boil over medium-high heat. Once boiling, add the yuca pieces.

    Cook Yuca

    Reduce the heat to medium and let the yuca cook for about 20-25 minutes or until tender. You can test by piercing it with a fork.

    Drain Yuca

    Once cooked, drain the yuca and set aside to cool slightly.

Making the Mojo Sauce

    Prepare Garlic

    Finely mince the garlic cloves using a knife or garlic press.

    Combine Ingredients

    In a mixing bowl, combine minced garlic, olive oil, fresh lime juice, chopped cilantro, salt, and black pepper.

    Mix Mojo Sauce

    Whisk all the ingredients together until well combined.

Serving

    Plate the Yuca

    Place the boiled yuca pieces on a serving platter.

    Drizzle Mojo Sauce

    Generously drizzle the mojo sauce over the yuca.

    Garnish and Serve

    Garnish with additional cilantro if desired and serve warm.
