Mix Dry Ingredients
In a large bowl, combine the all-purpose flour and salt. Mix well.

Incorporate Butter
Add the unsalted butter to the flour mixture. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

Add Water
Gradually add water, one tablespoon at a time, mixing until the dough comes together. It should be soft but not sticky. Wrap in plastic wrap and refrigerate for at least 30 minutes.

In a medium bowl, combine the cream cheese, guava paste, powdered sugar, and vanilla extract. Mix until smooth and well combined.
Assemble Empanadas

Roll Out Dough
On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a 4-inch round cutter.

Fill Empanadas
Place a tablespoon of the guava and cheese filling in the center of each dough circle. Fold the circle in half and press the edges together to seal. Crimp the edges with a fork to ensure they are secure.

In a small bowl, whisk together the egg and tablespoon of water. This will be used for the egg wash.

Bake Empanadas
Preheat your oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until they are golden brown.
