Method

For the Yuca

  1. 1

    Prepare the Yuca

Peel the yuca with a sharp knife, removing the outer brown skin and the inner pink layer. Cut the yuca into 2-inch pieces.

  2. 2

    Cook the Yuca

In a large pot, combine the yuca pieces, water, and salt. Bring to a boil over medium-high heat. Reduce heat and simmer for about 20-25 minutes, or until the yuca is tender when pierced with a fork.

  3. 3

    Drain and Cool

Once cooked, drain the yuca in a colander and let it cool for a few minutes. This will help it firm up for frying.

  4. 4

    Fry the Yuca

In a deep frying pan, heat the vegetable oil over medium heat. Once hot, carefully add the yuca pieces in batches, frying until golden brown and crispy, about 3-5 minutes per side. Remove and let drain on paper towels.

For the Mojo Garlic Sauce

  1. 5

    Prepare the Garlic

Mince the garlic cloves finely and set aside.

  2. 6

    Combine Ingredients

In a small bowl, mix the minced garlic, olive oil, lime juice, chopped cilantro, and salt. Stir well to combine.

  3. 7

    Let it Rest

Allow the sauce to sit for at least 10 minutes before serving to let the flavors meld.
