Prepare the Yuca
Peel the yuca with a sharp knife, removing the outer brown skin and the inner pink layer. Cut the yuca into 2-inch pieces.

Drain and Cool
Once cooked, drain the yuca in a colander and let it cool for a few minutes. This will help it firm up for frying.

Fry the Yuca
In a deep frying pan, heat the vegetable oil over medium heat. Once hot, carefully add the yuca pieces in batches, frying until golden brown and crispy, about 3-5 minutes per side. Remove and let drain on paper towels.

Prepare the Garlic
Mince the garlic cloves finely and set aside.

Combine Ingredients
In a small bowl, mix the minced garlic, olive oil, lime juice, chopped cilantro, and salt. Stir well to combine.

Allow the sauce to sit for at least 10 minutes before serving to let the flavors meld.
