Preparation

    Peel the Plantains

    Using a sharp knife, cut off the ends of each green plantain. Make a shallow cut along the length of the plantain and peel back the skin. Repeat with both plantains.

    Slice the Plantains

    Cut each peeled plantain into 1-inch thick slices.

Frying

    Heat the Oil

    In a large frying pan, heat 2 cups of vegetable oil over medium heat until it shimmers.

    Fry the Plantain Slices

    Carefully add the sliced plantains to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes or until they are golden and softened.

    Remove and Drain

    Using tongs, remove the fried plantains and place them on a paper towel-lined plate to drain excess oil.

Flattening and Second Fry

    Flatten the Fried Plantains

    Using a flat surface or a tostonera (plantain press), gently flatten each fried plantain slice to about 1/2 inch thick.

    Second Fry

    Return the flattened plantains to the hot oil and fry again for another 2-3 minutes until they are crispy and golden brown.

    Season and Serve

    Remove the tostones from the oil and place them on a paper towel again to drain. Sprinkle with salt and garlic powder. Drizzle with lemon or lime juice before serving.
