Once the chicken is cool enough to handle, shred the meat into bite-sized pieces, discarding the skin and bones.

Return the shredded chicken back to the pot. Add 4 cups of chicken broth and the bay leaves, thyme, salt, and black pepper. Stir to combine.

Bring the soup to a gentle boil, then reduce heat and let it simmer for an additional 20 minutes to allow the flavors to meld.
