Pork Preparation

Marinate the Pork
In a large bowl, combine minced garlic, orange juice, lime juice, cumin, oregano, salt, and black pepper. Mix well to form a marinade.

Add Pork to Marinade
Place the pork shoulder into the marinade, ensuring it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Roast the Pork
Preheat the oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Roast for approximately 4-5 hours or until the internal temperature reaches 190°F (88°C).

Shred the Pork
Once cooked, remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks.

Assemble the Sandwich
Slice the crusty bread rolls in half. Spread a generous amount of mayonnaise on both sides of the bread.

Add Pork and Onions
Layer the shredded pork on the bottom half of the bread, followed by a handful of pickled onions. Place the top half of the bread over the fillings.

Serve
Cut the sandwich in half if desired, and serve immediately with your choice of sides.
