Marinated Pork

Method

Marinated Pork

  1. 1

    Prepare the Marinade

In a mixing bowl, combine minced garlic, orange juice, lime juice, cumin, oregano, salt, and black pepper.

  2. 2

    Marinate the Pork

Cut the pork shoulder into bite-sized pieces and add to the marinade. Toss to coat well. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

  3. 3

    Fry the Pork

Heat olive oil in a deep frying pan over medium-high heat. Remove pork from marinade and fry in batches until golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels.

Sides

  1. 4

    Cook the White Rice

In a pot, combine white rice and 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes until rice is tender and water is absorbed.

  2. 5

    Prepare the Black Beans

Open the can of black beans, rinse under cold water, and heat in a small saucepan over medium heat for about 5-10 minutes until warmed through.

  3. 6

    Fry the Sweet Plantains

Peel and slice the sweet plantains diagonally into 1-inch thick pieces. Heat vegetable oil in a skillet over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
