Prepare the Ingredients
Dice the carrots, celery, and onion into small pieces. Mince the garlic cloves. Rinse the lentils under cold water and drain.

Cook the Sausage
In the same pot, add the Italian sausage and cook until browned, breaking it up into smaller pieces as it cooks. Once browned, remove the sausage and set aside.

Add Liquid Ingredients
Pour in the white wine and scrape the bottom of the pot to deglaze, cooking for about 2 minutes until the wine reduces slightly.

Combine Everything
Add the rinsed lentils, broth, bay leaves, thyme, salt, and pepper to the pot. Stir well to combine all ingredients.

Simmer the Soup
Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30-35 minutes, or until the lentils are tender.

Finish the Soup
Once the lentils are cooked, stir in the cooked sausage and crumble the bacon back into the soup. Remove the bay leaves and adjust seasoning if necessary.
