    Soaking the Beans

    Rinse the red beans under cold water. Soak them in a large bowl with enough water to cover them by several inches for at least 6 hours or overnight.

    Chopping Vegetables

    While the beans are soaking, chop the onion, bell pepper, and tomato into small pieces, and mince the garlic cloves.

    Preparing Meats

    Chop the applewood bacon and Spanish cured sausage into bite-sized pieces.

Cooking

    Cooking the Beans

    Drain the soaked beans and place them in a large pot. Add 6 cups of fresh water and the ham hock. Bring to a boil over medium-high heat.

    Adding Vegetables and Spices

    Once boiling, reduce the heat to low, and add the onion, garlic, bell pepper, tomato, bay leaves, cumin, chili powder, black pepper, and salt. Stir well.

    Simmering

    Cover the pot and let the beans simmer for about 1 hour, stirring occasionally until the beans are tender.

    Adding Meats

    After 1 hour, add the chopped applewood bacon and Spanish cured sausage to the pot. Continue simmering for another 30-40 minutes until the meats are cooked through and flavors are well combined.

    Final Seasoning

    Taste the frijoles and adjust the seasoning with more salt if necessary. Remove the ham hock and bay leaves before serving.
