    Soak the Beans

    In a large bowl, rinse the black beans under cold water. Add enough water to cover them completely and let them soak overnight. This will help soften the beans and reduce cooking time.

    Cook the Beans

    Drain and rinse the soaked beans. In a large pot, combine the beans with 4 cups of fresh water. Bring to a boil over high heat, then reduce the heat to low and cover the pot. Let the beans simmer for 1 to 1.5 hours, or until tender.

    Sauté the Aromatics

    In a separate pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

    Season the Beans

    Once the beans are tender, add the sautéed onion and garlic mixture to the pot of beans. Stir in the cumin, oregano, salt, and black pepper. Adjust seasoning to taste and let the mixture simmer for an additional 10-15 minutes.

    Finish and Serve

    Remove the pot from heat and stir in the lime juice and chopped cilantro. Serve the frijoles negros warm as a side dish or as a filling for tacos, burritos, or bowls.
