Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour and salt. Mix well.

  2. 2

    Add Butter

Cut the unsalted butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  3. 3

    Combine Wet Ingredients

In a separate bowl, whisk together the egg yolk and cold water.

  4. 4

    Form Dough

Gradually add the egg mixture to the flour mixture, stirring until a dough forms. Knead the dough gently for a few minutes until smooth.

  5. 5

    Chill Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

  1. 6

    Cook the Meat

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

  2. 7

    Add Ground Meat

Add the ground beef or chicken to the skillet. Cook until browned, breaking it up with a spoon.

  3. 8

    Add Vegetables and Spices

Stir in the diced bell pepper, chopped olives, cumin, paprika, and season with salt and pepper. Cook for another 5 minutes until the vegetables are tender.

  4. 9

    Combine with Eggs

Remove from heat and stir in the chopped hard-boiled eggs. Let the filling cool slightly.

Assembly and Baking

  1. 10

    Roll Out Dough

Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick.

  2. 11

    Cut Dough Circles

Using a round cutter or a glass, cut out circles of dough (about 4-5 inches in diameter).

  3. 12

    Fill Empanadas

Place a spoonful of the filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.

  4. 13

    Bake Empanadas

Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.

  5. 14

    Serve

Let the empanadas cool slightly before serving. Enjoy with your favorite dipping sauce!
