Cooking the Shrimp

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Bell Peppers and Onion

    Add sliced red, yellow, and green bell peppers along with the sliced onion. Cook for 5-7 minutes until the vegetables are tender.

    Cook the Tomatoes

    Stir in the diced tomatoes and cook for an additional 3-4 minutes until they soften.

    Season and Add Shrimp

    Add cumin, paprika, salt, and black pepper to the skillet, stirring well. Then, add the shrimp and lime juice, cooking until the shrimp are pink and opaque, about 3-5 minutes.

    Finish with Cilantro

    Once the shrimp are cooked, remove from heat and stir in the chopped cilantro. Set aside.

Preparing the Rice

    Cook the Rice

    In a medium saucepan, combine white rice, water, and salt. Bring to a boil over high heat.

    Simmer

    Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and water is absorbed.

    Fluff the Rice

    Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Making the Plantains

    Prepare the Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry the Plantains

    In a large skillet, heat vegetable oil over medium-high heat. Fry the plantain slices for about 3-4 minutes on each side until golden brown.

    Season the Plantains

    Remove plantains from the oil and place them on paper towels to drain excess oil. Sprinkle with salt while still hot.
