Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine minced garlic, lime juice, olive oil, salt, black pepper, cumin, and paprika. Mix well.

  2. 2

    Marinate the Steak

Add the top sirloin steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking

  1. 3

    Cook the Steak

Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Remove the steak from the marinade and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.

  2. 4

    Prepare the Vegetables

In the same skillet, add sliced onions, bell peppers, jalapeño, and diced tomatoes. Sauté for 5-7 minutes until the vegetables are tender.

  3. 5

    Combine Steak and Vegetables

Slice the cooked steak against the grain and return it to the skillet with the vegetables. Toss to combine and heat through for an additional 2-3 minutes.

Serving

  1. 6

    Cook the Rice

Prepare white rice according to package instructions. Typically, this involves rinsing the rice, bringing water to a boil, adding the rice, and simmering until cooked.

  2. 7

    Fry the Plantains

Peel and slice the green plantains. Heat oil in a pan over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

  3. 8

    Plate the Dish

Serve the bistec enchilado hot, alongside white rice and fried green plantains. Season with salt to taste.
