Cook the Noodles
Soak the rice noodles in warm water for about 20-30 minutes or until soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together fish sauce, soy sauce, brown sugar, and lime juice. Set aside.

Prepare the Vegetables
Chop the green onions, julienne the carrot, and rinse the bean sprouts.

Cook the Tofu and Shrimp
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Add cubed tofu and cook until golden brown, about 5 minutes. Remove tofu and set aside. In the same pan, add another tablespoon of oil and cook the shrimp until pink and cooked through, about 3-4 minutes. Remove shrimp and set aside.

Stir-Fry the Vegetables
Add the remaining tablespoon of oil to the pan. Add minced garlic and stir-fry for about 30 seconds until fragrant. Add the carrots and cook for another 1-2 minutes. Then add the green onions and bean sprouts, stirring for another 2 minutes.

Combine Everything
Add the soaked noodles to the pan with vegetables. Pour the prepared sauce over the noodles and toss to combine. Add the cooked tofu and shrimp, stirring everything together for another 2-3 minutes until heated through.
Serving

Plate the Dish
Transfer the Pad Thai to serving plates. Top with crushed peanuts and chopped cilantro.
