Preparation of Potato Skins
Preheat the Oven
Preheat your oven to 400°F (200°C).
Prepare the Potatoes
Wash and scrub the russet potatoes under cold water to remove any dirt. Pat them dry with a clean towel.
Cool and Scoop
Once the potatoes are baked, let them cool for about 10 minutes. Carefully cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato in the skin.
Baking and Topping
Bake the Skins
Place the potato skins on a baking sheet, cut side up, and bake for an additional 15-20 minutes, or until they are crispy.
Add Toppings
Remove the potato skins from the oven and sprinkle the shredded cheddar cheese evenly inside each skin, followed by crumbled bacon.
Melt the Cheese
Return the loaded potato skins to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
Serving
Garnish and Serve
Once the cheese is melted, remove from the oven and top with chopped green onions. Serve hot with a side of sour cream for dipping.
