For the Chicken Satay

For the Peanut Sauce

Method

Preparing the Chicken Satay

  1. 1

    Marinate the Chicken

In a large bowl, combine the soy sauce, coconut milk, brown sugar, lime juice, minced garlic, minced ginger, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Add Chicken

Cut the chicken breast into thin strips and place them into the marinade. Ensure all pieces are well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

  3. 3

    Prepare Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. After marinating, thread the chicken strips onto the skewers.

Grilling the Chicken Satay

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled.

  2. 5

    Grill the Skewers

Place the chicken skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

Making the Peanut Sauce

  1. 6

    Combine Ingredients

In a saucepan over medium heat, combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and water. Stir well until smooth.

  2. 7

    Adjust Consistency

Cook the sauce for 3-5 minutes, stirring frequently. If the sauce is too thick, add more water to reach your desired consistency. Add chili flakes to taste.

Serving

  1. 8

    Serve

Arrange the grilled chicken skewers on a platter and serve with the peanut sauce on the side for dipping.
