Prepare the Filling

    Sauté the Vegetables

    In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

    Add Remaining Vegetables

    Add the julienned carrots, shredded cabbage, sliced bell pepper, and chopped green onions to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

    Season the Filling

    Pour the soy sauce over the vegetables, mixing well to combine. Cook for an additional 2 minutes, then remove from heat and let cool.

Assemble the Spring Rolls

    Prepare the Wrappers

    Lay one spring roll wrapper on a clean surface, with one corner pointing towards you. Place about 2 tablespoons of the vegetable filling near the corner.

    Roll the Wrapper

    Fold the corner over the filling, then fold in the sides and continue rolling tightly until sealed. Repeat with remaining wrappers and filling.

Fry the Spring Rolls

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Rolls

    Carefully add the spring rolls to the hot oil, a few at a time, and fry for about 3-4 minutes or until golden brown, turning occasionally.

    Drain and Serve

    Remove the fried spring rolls and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
