Preparation of Soup Base

1. Prepare the Broth

In a pot, bring the chicken broth to a boil over medium-high heat.

Crush the lemongrass stalks and galangal root slightly to release their flavors. Add them along with the kaffir lime leaves and bird's eye chilies to the boiling broth.

3. Season the Broth

Stir in the fish sauce, lime juice, and sugar into the pot. Reduce the heat to a simmer.
