Prepare the Chicken

Cut the Chicken
Cut the chicken breast into thin strips, about 1 inch wide.

Make the Marinade
In a bowl, combine coconut milk, soy sauce, lime juice, minced garlic, grated ginger, brown sugar, red curry paste, salt, and black pepper. Whisk until well combined.

Marinate the Chicken
Add the chicken strips to the marinade, making sure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Prepare the Peanut Sauce

Combine Ingredients
In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and red chili flakes.

Cook the Sauce
Heat the mixture over medium heat, stirring continuously until it becomes smooth and creamy. If the sauce is too thick, add water gradually until the desired consistency is reached.

Taste and Adjust
Taste the sauce and add more chili flakes if desired. Set aside to cool.
Grill the Chicken

Soak Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Thread the Chicken
Thread the marinated chicken strips onto the soaked skewers, about 4-5 pieces per skewer.

Preheat the grill to medium-high heat.

Arrange the grilled chicken skewers on a serving platter.

Serve with the peanut sauce on the side for dipping.
