Marinating Chicken

Prepare the Chicken
Cut the chicken breasts into bite-sized pieces, about 1-2 inches.

Mix Marinade
In a bowl, combine soy sauce, lime juice, brown sugar, minced garlic, ground ginger, cayenne pepper, and sesame oil. Mix well until the sugar dissolves.

Marinate Chicken
Add the chicken pieces to the marinade, coating them thoroughly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Preparing Peanut Sauce

Mix Ingredients
In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, chili paste, and water.

Cook Sauce
Over medium heat, stir the mixture until it is smooth and heated through, about 5-7 minutes. Remove from heat and set aside.
Grilling Skewers

Prepare Skewers
Soak the wooden skewers in water for at least 15 minutes to prevent burning.

Assemble Skewers
Thread the marinated chicken pieces onto the soaked skewers, packing them tightly but not so much that they can't cook evenly.

Remove the skewers from the grill and serve hot with the peanut sauce on the side.
