Preparation

Soak the Noodles
Place the rice noodles in a large bowl and cover with warm water. Let them soak for about 30 minutes until softened. Drain and set aside.

Prepare the Sauce
In a small bowl, whisk together fish sauce, soy sauce, brown sugar, lime juice, and sriracha sauce until the sugar is dissolved. Set aside.
Cooking

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the shrimp (or chicken or tofu) and stir-fry for about 3-5 minutes until cooked through. Remove from the skillet and set aside.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of oil if necessary. Add the carrots, red bell pepper, and green onions. Stir-fry for about 2-3 minutes until the vegetables are tender-crisp.

Combine Ingredients
Add the drained rice noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and toss to combine. Add the cooked protein back into the skillet and toss everything together for another 2-3 minutes until heated through.
Serving

Garnish and Serve
Remove from heat and stir in the bean sprouts. Serve the Pad Thai hot, garnished with chopped peanuts, fresh cilantro, and lime wedges on the side.
