Prepare the Ingredients
Dice the onions and tomatoes. Remove the casing from the Italian sausage and crumble it.

Roast the Vegetables
Preheat the oven to 400°F (200°C). Toss the diced onions and tomatoes with 1 tablespoon of olive oil, salt, and pepper to taste. Spread them on a baking sheet and roast in the oven for 20-25 minutes.

Cook the Sausage
In a skillet over medium heat, add the remaining tablespoon of olive oil. Add the crumbled Italian sausage and cook until browned and fully cooked, about 5-7 minutes.

Combine Ingredients
In a large bowl, combine the cooked sausage, roasted onions, and tomatoes. Add the ricotta and half of the asiago cheese. Mix until well combined.

Bake the Dish
Transfer the mixture to a baking dish and sprinkle the remaining asiago cheese on top. Bake in the oven for 15-20 minutes or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven, garnish with chopped fresh parsley, and serve warm.
