Preparation

    Make the Crust

    Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until well combined and press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.

    Prepare the Cheesecake Filling

    In a large bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, sour cream, vanilla extract, and orange zest. Mix until well combined. Add the eggs one at a time, mixing well after each addition.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and Chill

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.

    Prepare the Citrus Confit

    In a small saucepan, combine citrus juice (such as orange and lemon), sugar, and a pinch of salt. Simmer until the sugar dissolves and the mixture thickens slightly. Allow to cool before serving.

    Prepare the Creme Anglaise

    In another saucepan, heat milk and vanilla bean until just below boiling. In a bowl, whisk egg yolks and sugar until light. Gradually add the hot milk to the egg mixture, whisking continuously. Return to the saucepan and stir over low heat until thickened. Strain and cool.

    Serve the Cheesecake

    Slice the cheesecake and serve with whipped cream, citrus confit, and drizzle with creme anglaise.
