    Prepare the Ingredients

    Start by roasting the garlic. Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft.

    Cook the Pasta

    In a large pot of boiling salted water, cook the tagliatelle according to package instructions until al dente. Drain and set aside.

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo and cook until browned and crispy, about 5-7 minutes. Remove from heat.

    Combine Sauce and Cheese

    In a large mixing bowl, combine the cooked tagliatelle, cooked chorizo, roasted garlic (squeezed out of the skin), pesto, and tomato cream sauce. Mix until well combined.

    Serve

    Divide the pasta mixture into bowls, top with fresh mozzarella, and serve with grilled bread on the side.
