Prepare the Pork Belly
Preheat the oven to 375°F (190°C). Season the pork belly with salt and pepper, then place it in a roasting pan. Roast for about 30-40 minutes until crispy and cooked through. Let it cool, then chop into bite-sized pieces.

Roast the Jalapenos
While the pork belly is roasting, place the jalapenos on a baking sheet and roast in the oven for about 15 minutes or until the skins are blistered. Remove from the oven, let cool, then chop finely.

Assemble the Dish
In a large baking dish, spread the tomato sauce evenly on the bottom. Layer the chopped pork belly, pineapple chunks, roasted jalapenos, and both cheeses (mozzarella and provolone) on top of the sauce.

Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Once out of the oven, sprinkle chopped scallions on top for garnish. Allow to cool slightly before serving.
