    Prepare the Béchamel Sauce

    In a saucepan over medium heat, melt 2 tablespoons of butter. Stir in 2 tablespoons of all-purpose flour and cook for 2 minutes. Gradually whisk in 2 cups of milk, and cook until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg. Set aside.

    Sauté the Wild Mushrooms

    In a skillet, heat 1 tablespoon of butter over medium heat. Add the wild mushrooms and sauté for about 5-7 minutes until they are tender and golden. Add the spinach and cook until wilted. Mix this into the béchamel sauce.

    Assemble the Dish

    In a baking dish, spread a layer of the béchamel sauce with mushrooms and spinach. Place slices of brie cheese evenly over the sauce.

    Add the Eggs

    Crack the eggs over the brie and season them with salt and pepper. Drizzle the truffle oil over the top.

    Bake

    Preheat the oven to 180°C (350°F). Bake the dish for 20-25 minutes, or until the eggs are set to your liking and the top is golden.

    Let cool slightly before serving. Drizzle additional truffle oil on top if desired.
