    Prepare the Fingerling Potatoes

    Preheat the oven to 425°F (220°C). Wash the fingerling potatoes and pat them dry. Slice them in half lengthwise and toss them in a bowl with olive oil, salt, and black pepper.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet and roast in the preheated oven for about 25-30 minutes or until golden brown and crispy, flipping halfway through.

    Cook the Bacon

    While the potatoes are roasting, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble into pieces.

    Prepare the Roasted Garlic

    Cut the top off the head of garlic, drizzle with a little olive oil, wrap in aluminum foil, and roast in the oven alongside the potatoes for the last 20 minutes.

    Assemble the Poutine

    In a large serving dish, layer the roasted fingerling potatoes, followed by the chile-braised beef, crumbled bacon, and roasted garlic (squeezed from the skins). Pour the hot beef gravy over the top.

    Finish with Cheese

    Sprinkle the Mahon cheese generously over the hot poutine so it melts slightly. Serve immediately.
