    Marinate the Tomatoes

    In a medium bowl, combine the grape tomatoes, olive oil, salt, and pepper. Toss to coat and let marinate for at least 15 minutes.

    Make the Spinach Pesto

    In a food processor, combine fresh basil, spinach, garlic, pine nuts, Parmesan cheese, and olive oil. Blend until smooth, adding more olive oil if necessary. Season with salt and pepper to taste.

    Prepare the Balsamic Reduction

    In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce the heat to low and simmer until thickened, about 10-15 minutes. Remove from heat and let cool.

    Grill the Bread

    Preheat a grill or grill pan. Brush the bread slices with olive oil and grill until golden brown on both sides, about 2-3 minutes per side.

    On a serving platter, place the burrata cheese in the center. Surround it with the marinated grape tomatoes and dollops of spinach pesto. Drizzle the balsamic reduction over the top and serve with grilled bread.
