Prepare the Ricotta Filling
In a mixing bowl, combine the ricotta cheese, granulated sugar, cinnamon, nutmeg, and a pinch of salt. Mix until smooth and set aside.

Make the Caramel Sauce
In a saucepan, melt the butter over medium heat. Add the brown sugar and stir until combined and bubbling. Cook for an additional 2-3 minutes until slightly thickened, then remove from heat and let cool slightly.

Assemble the Tortes
Preheat your oven to 350°F (175°C). In a greased tart pan, layer half of the ricotta mixture, followed by half of the blueberries. Repeat with the remaining ricotta and blueberries on top.

Bake the Tortes
Bake the tortes in the preheated oven for 25-30 minutes, or until the edges are golden and the filling is set. Remove from the oven and let cool.

Prepare Whipped Cream
In a mixing bowl, whip the heavy cream with the vanilla extract until soft peaks form.

Slice the tortes and serve warm or at room temperature, drizzled with caramel sauce and topped with whipped cream.
