Prepare the Casings
Soak the hog casings in water for at least 30 minutes. Rinse them thoroughly to remove any salt and set aside.

Cook the Oatmeal
In a saucepan, bring 2 cups of water to a boil. Stir in the oatmeal, reducing the heat to low, and let it simmer for about 10 minutes or until tender. Set aside to cool.

Mix the Ingredients
In a large mixing bowl, combine the pork blood, cooked oatmeal, pork fat, chopped onion, salt, black pepper, thyme, and nutmeg. Mix well until fully combined.

Stuff the Sausages
Carefully stuff the prepared hog casings with the blood mixture using a sausage stuffer or funnel. Twist the sausages at regular intervals to create individual links. Tie off the ends securely.

Cooking the Sausages
Bring a large pot of water to a gentle simmer. Add the sausages and cook for about 30-40 minutes. Ensure they are cooked through but not bursting.

Cooling
Remove the sausages from the water and let them cool on a wire rack. Once cooled, they can be sliced and served or refrigerated for later use.
