Method

Preparing the Tostones

    Peeling and Slicing Plantains

    Peel the green plantains by cutting off the ends and making a slit down the side. Remove the peel and slice the plantains into 1-inch thick pieces.

    Frying the Plantains

    In a large skillet, heat vegetable oil over medium heat. Add the sliced plantains and fry for about 3-4 minutes or until they are golden on both sides. Remove from the oil and drain on paper towels.

    Pressing the Plantains

    Using a flat surface or a tostonera, press each fried plantain slice until flattened.

    Second Frying

    Return the pressed plantains to the hot oil and fry for another 2-3 minutes until crispy. Remove and drain again, then season with salt.

Preparing the Toppings

    Churrasco Preparation

    Grill or pan-sear the skirt steak to your desired doneness. Let it rest for a few minutes before slicing it thinly.

    Salmon Ahumado Preparation

    Slice the avocado and prepare the pickled red onions and cilantro aioli.

Assembling the Montaditos

    Topping the Tostones

    Top each tostone with either sliced churrasco and chimichurri or smoked salmon, avocado, pickled red onions, and cilantro aioli. Serve immediately.
