Prepare the Calamari
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Dredge the calamari rings in the mixture until well coated.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Sauce
In a separate bowl, mix the sweet chili sauce with lime juice. Adjust seasoning if needed.

Combine and Serve
Toss the fried calamari in the sweet chili sauce until evenly coated. Serve immediately with lime wedges on the side.
