Prepare the Marinade

In a blender, combine garlic, orange juice, lime juice, oregano, cumin, salt, black pepper, and olive oil. Blend until smooth.

Marinate the Pork

Place the pork shoulder in a large dish or resealable bag. Pour the marinade over the pork, ensuring it's well-coated. Cover and refrigerate for at least 12 hours, preferably overnight.

Preheat the Oven

Preheat your oven to 300°F (150°C).

Roast the Pork

Remove the pork from the marinade and place it in a roasting pan. Roast in the oven for about 4-5 hours, basting occasionally with the pan juices, until the internal temperature reaches 190°F (88°C).

Prepare the Onions

While the pork is roasting, slice the onions and grill them on medium heat until they are caramelized.

Serve

Once the pork is done, let it rest for 20 minutes before shredding. Serve with the grilled onions on top and garnish with fresh cilantro.
