1. Prepare the Chicken

In a large skillet, heat olive oil over medium heat. Add the chicken thighs and brown on both sides, about 5-7 minutes. Remove and set aside.

2. Sauté Vegetables

In the same skillet, add chopped onion and sliced bell pepper. Sauté until softened, about 4-5 minutes. Add minced garlic and cook for another minute.

3. Combine Ingredients

Return the browned chicken to the skillet. Add canned diced tomatoes, chicken broth, cumin, oregano, salt, and black pepper. Stir to combine.
