Preparation Steps

    Cook the Rice

    In a medium pot, bring 2 cups of water to a boil. Add 1 cup of white rice, a pinch of salt, and reduce heat to low. Cover and simmer for 18-20 minutes until rice is cooked and water is absorbed.

    Prepare the Beans

    In a saucepan over medium heat, add 1 cup of black beans and 1 tsp of cumin. Stir and heat until warmed through. Season with salt to taste.

    Cook the Protein

    In a skillet, heat 1 tbsp of olive oil over medium heat. Add your choice of protein and cook until fully cooked (chicken/beef: about 5-7 minutes, tofu: about 3-5 minutes).

    Make the Tortilla Bowls

    Preheat the oven to 375°F (190°C). Press each tortilla into an oven-safe bowl and brush with remaining olive oil. Bake for 10-12 minutes until crispy.

    Assemble the Bowl

    Once everything is cooked, layer the crispy tortilla bowl with rice, black beans, cooked protein, pickled red onions, and sliced avocado.
