Pan-seared duck breast with a cherry reduction.

Remove duck breasts from refrigerator 20–30 minutes before cooking to come toward room temperature. Pat skin and meat very dry with paper towels.

Prepare duck

Score the skin in a crosshatch pattern with a sharp knife, cutting through the fat but not into the meat (about 1/8 inch deep). This helps render fat and crisps skin.

Season both sides generously with kosher salt and freshly ground black pepper. Press seasoning into the meat.

Place a large, heavy skillet (preferably cast-iron) over medium-low heat. Do not add oil. When pan is warm (not smoking), place duck breasts skin-side down in the cold pan, spaced so they do not touch. This allows gradual fat rendering.

Render the fat: cook skin-side down for 10–14 minutes, adjusting heat to maintain a steady slow sizzle—medium-low to medium. Use tongs to press the breasts flat occasionally so skin makes contact. As fat accumulates, carefully spoon off excess into a heatproof container, leaving enough to baste if desired.

When skin is deeply golden brown and crisp, flip the breasts and sear the meat side for 2–4 minutes to brown.

Check doneness: for medium-rare aim for internal temperature 125–130°F (52–54°C); medium 135°F (57°C). Use an instant-read thermometer inserted into the thickest part. If using thicker breasts and the meat needs more time, transfer the pan to a 400°F (200°C) oven for 3–6 minutes to finish (timing depends on thickness).

Remove duck to a cutting board and tent loosely with foil. Rest 8–10 minutes so juices redistribute.

While duck rests (or after removing duck from pan), pour off all but 1 tablespoon of the rendered duck fat from the skillet. Keep the fond (browned bits) in the pan.

Place the skillet over medium heat. Add cherries and cook, stirring, for 2–3 minutes until they begin to release juices.

Add the red wine and use a wooden spoon to scrape up browned bits from the bottom of the pan (deglaze). Bring to a gentle simmer and let reduce by about half, 3–5 minutes.

Add the chicken or duck stock, balsamic vinegar, brown sugar, and thyme sprigs. Stir to combine and continue simmering until the sauce thickens and coats the back of a spoon, about 6–8 minutes. If using frozen cherries, simmer a bit longer to concentrate flavors.

Remove thyme sprigs. Taste and season with fine sea salt and freshly ground black pepper, adjusting sugar or vinegar if needed for balance between sweet and tart.

Turn heat to low and swirl in the cold butter pieces one at a time to finish the sauce and give it a glossy texture. Do not boil after adding butter. If desired, press the sauce through a fine-mesh sieve for a smoother finish, discarding solids, then return to pan to keep warm.

Slice duck breasts: hold the breast steady and slice across the grain into 1/4–1/2 inch slices.

Arrange sliced duck on warmed plates or a platter. Spoon the cherry reduction over and around the slices. Garnish with fresh thyme leaves and optional microgreens or baby arugula.

Serve immediately with desired sides (roasted potatoes, creamy polenta, or steamed vegetables).
