For the Seared Foie Gras

Prepare the Foie Gras
Remove the foie gras from the refrigerator and let it sit at room temperature for about 15 minutes. Season both sides with salt and black pepper.

Strain and Prepare Gelatin
Strain the cider mixture into a clean saucepan. Soak gelatin sheets in cold water for 5 minutes, then add to the warm cider. Stir until fully dissolved, then pour into a shallow dish and refrigerate until set (about 2-3 hours).

Poach the Pears
Peel the pears and add them to the poaching liquid. Simmer gently for about 20-25 minutes until soft but not mushy. Remove and allow to cool.
