Lobster Salad Preparation

    Prepare the Potato Blini

    In a mixing bowl, combine the diced potatoes with salt and pepper. Boil until tender, about 10-15 minutes. Drain and mash the potatoes in a bowl.

    Cook the Blini

    Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter. Pour in small rounds of the batter (about 2-3 tablespoons each) and cook until bubbles form on the surface, about 2-3 minutes. Flip and cook the other side until golden brown. Repeat with remaining batter.

    Assemble the Lobster Salad

    In a separate bowl, gently combine the cooked lobster meat with koji mayo, salt, and pepper to taste. Make sure the lobster is well-coated.

    Serve the Salad

    On a plate, place a few potato blinis. Top with a generous spoonful of the lobster salad. Garnish with Ossetra caviar, a sprinkle of nori furikake, and masago arare.
